Homemade “CHEESY CHICKEN PARMESAN PASTA” I made the most delicious meal last night! In fact, it was so good, that we even ate all the leftovers tonight. I actually used Rotisserie Chicken, that I tore in small pieces. I have never purchased rotisserie chicken before, and I have really been missing out! It’s tender & flavoured perfectly. It also saved a great deal of time. The sauce is fabulous, I used a combination of about 4 different recipes, and it was scrumptious! When you throw in crispy crumbled bacon & pieces of fried ham…..top it with grated Parmesan….you just can’t lose. We enjoyed it more than any pasta dish we’ve had in nice restaurants. The next day, I heated up the leftovers, and diced a Roma tomato, and mixed it in with the sauce. It tasted just like Chicken Scallopini. I hope you enjoy this the maximum amount as we did. I served this with a tossed green salad, with Poppyseed Dressing, Mandarin Oranges, crisp carrots & Honey Roasted Sunflower seeds, and Toasted Garlic Bread.
I should also tell you, that I made the sauce & prepared the meats in the morning, then refrigerated it. When I was ready to make dinner, all I had to do was add the Sauce to a large skillet & re-heat on a low simmer. That way, all I really had to do was boil my pasta. I hope you enjoy this recipe.

I found mine at Sam’s Club. You can also use chicken breasts as well, but the other saves a lot of time. In fact, I only used half of the chicken, and froze the other half for another time.

I fried about 10 slices of bacon until crisp. Then I tossed in about 1 cup of small diced smokey ham. Fry that along with the bacon until the ham is browned. I also tossed it with 1/4 tsp. of onion powder.

The recipe follows:

I used spaghetti noodles.
You could use any pasta your family likes.
2 1/2 cups of Cooked Shredded Chicken breasts
1 cup of diced fried ham
1 cup crumbled bacon
1/2 cup to put in with the sauce
1/2 cup to sprinkle over the top
1 diced Roma Tomato (opt)
1 cup real grated Parmesan Cheese
1/2 cup to blend in with the Sauce
1/2 cup to sprinkle over the top
1/2 tsp. garlic powder
1/2 tsp. cracked black pepper
I like pepper, but you could add less
1/2 tsp. Onion Powder
Use 1/4 tsp. with the mixed with the bacon & ham, while frying
Use 1/4 tsp. in the sauce
Pasta: Use whatever your family likes.

1 Cup Milk
1 Cup Whipping Cream
1 cup Chicken Broth
1 cup Colby cheese
1/2 cup of the grated Parmesan cheese
2 Tablespoons butter
2 Tablespoons flour
2 to 3 Tablespoons freshly squeezed lemon juice
1/4 tsp. of the Onion Salt
Salt & pepper to taste
1/2 tsp. white sugar

Very medium heat, melt 2 tablespoons butter. Add 2 tablespoons flour & whisk continuously until bubbly. Continue whisking, and slowly add milk, cream, chicken broth, sugar, salt, pepper & onion powder. Continue whisking as it thickens. Turn heat to low, and add the grated Colby cheese, the grated Parmesan Cheese. Stir until melted. Squeeze in your fresh squeezed lemon juice. I used 2 tablespoons Turn heat to a low simmer, so that it doesn’t boil, but stays warm. (Start your water boiling for the pasta).
Add your chicken pieces, 1/2 of the bacon, and the crisp fried ham. Blend well.
Keep warm, let simmer gently, and boil your pasta. (As much as your family will need. This recipe would easily serve 4 hungry people. When pasta is ready, either mix in with the sauce, or plate your pasta, and serve the sauce over the top. Add additional crumbled bacon and grated Parmesan on the top. Delish….Enjoy!
